Baking With Stevia

Baking with Stevia is quite tricky, as slightly less than 1 tablespoon of Stevia is equivalent to 1 full cup of regular white granulated sugar. This makes it difficult to simply substitute sugar with an equal amount of Stevia. In addition, the type of Stevia that you use is also a factor, as there are powdered, liquid and flavored versions.

Unlike chemical sweeteners like Nutrasweet and Splenda Stevia does not break down as easily when exposed to high and low temperatures. Stevia is also easily mixed with other sweeteners and ingredients.
