Stevia Brownies Recipe II

These are some of the most delicious brownies you're likely to taste and are moist and chewy. They also store well but aren't likely to last long enough for that!

Ingredients:
1/4 cup sweet butter, melted
1/3 cup unsweetened cocoa powder
2 eggs
4 tablespoons Truvia or your favorite powdered stevia sweetener (start with 1 TBSP and taste as you add, stir in 1 -3 teaspoons more if you want a sweeter brownie)
1/2 cup all purpose flour
1 teaspoon baking powder
a pinch of salt
1/4 cup vegetable oil
1/2 cup buttermilk
1 teaspoon vanilla
1/4 cup unsweetened or sugar-free chocolate chips (optional)

Preheat oven to 350 degrees. Either spray 8 inch square pan with cooking spray or line with oiled foil. Combine butter and cocoa powder. In large bowl beat the eggs. Then add Stevia, flour, baking powder and salt.

Add to egg and Stevia mixture. Add cocoa and butter mixture. Next, add the buttermilk, oil and vanilla. Stir well. At this point, you can add the chocolate chips or and equal amount of chopped nuts. Neither is necessary and you can have plain brownies if you'd prefer. Pour batter into prepared baking pan and bake at 350 till a knife or toothpick comes out clean. This can take between 20-30 minutes. Allow to cool and cut into squares.
