Stevia Brownies Recipe

This recipe makes a chewy, fudgy type of brownie. Be careful with how much stevia you put in, too much and the result may be bitter. The new stevia products like Truvia are pretty good for this recipe as they have a good consistency for baking. Make sure to taste a little of the batter when you have combined everything. Then add additional stevia if necessary. Remember that, like salt, you can always add more, but you can't take it away.

1 cup unsweetened chocolate or carob (chips or chopped)
1/2 cup butter or margarine
1/2 cup plus 1 tbsp flour 
1 - 3 tsp of Truvia, Sweetleaf Stevia powder or other stevia extract that you like 
1/4 tsp ground cinnamon
1/4 tsp nutmeg
1 tsp baking soda
2 eggs
2 tsp vanilla
1/2 tsp almond extract
4 tbsp plain yogurt
1/2 cup oats (grind them in a blender or coffee grinder beforehand) 
1/2 cup walnuts or other favorite nuts (chopped)



Grease a 9 inch square baking pan. Melt the chocolate or carob with butter in a double boiler. Mix the flour, stevia, spices and baking soda in another bowl. In a second bowl, combine eggs, almond and vanialla extracts and yogurt, adding chopped oats and set aside. Remove chocolate from heat and stir in the dry ingredients and the egg mixture. Spread evenly into the greased pan. Sprinkle nuts over surface, pressing in lightly with a spatula. Bake at 325 degrees for 15 to 20 minutes. Brownies are done when they pull away from the sides of the pan and the top looks dry. Avoid overbaking. Cool on wire rack before cutting into squares.
