Stevia Pancakes Recipe
It makes sense to start with a breakfast recipe to start the day. How about a batch of light and fluffy stevia pancakes?
Gather these ingredients:
4 large eggs
1 cup all-purpose flour
2 packets of Stevia Plus or equivalent brand stevia sweetener (can use drops or powder)
1 teaspoon of baking powder
1 teaspoon vanilla or to taste (if you like a little less vanilla taste, you can go down to 1/2 or 3/4 teaspoon)
A generous pinch of salt
2/3 sour cream
6 tablespoons of milk
Oil or nonstick spray (your choice)
Your choice of syrup, jam, butter or other toppings
First, separate the eggs and yolks. Heat pan or griddle until a drop of water sizzles in it. Combine the flour, Stevia Plus, baking powder,
salt and vanilla in one bowl.
In a different bowl, beat the milk, egg yolks and sour cream. Add this to the flour and baking powder combination. Stir well or use a mixer at
the lowest setting to combine. Beat egg whites until they form soft to medium size peaks. Fold the whites into the rest of the batter.
Add oil or nonstick spray to the hot pan. Use a large spoon to make pancakes the size you'd like. It takes a few minutes per side to cook the
pancakes but each side should touch the bottom of the pan one time. If you have to keep turning the pancakes, the pan or griddle is simply not
hot enough and the temperature should be adjusted. Prepare for your taste buds to be delighted! You can also make wheat flour pancakes with
stevia.
